Blueberry Cupcakes: Ironically, They Make You Feel the Opposite of Blue

I Love blueberry pie. I wanted so badly to re-create that flavor in a cupcake. I took one of my vanilla recipes and tweaked it, adding a little lemon and some frozen blueberries. I created a vanilla cinnamon butter cream to top it off. The finished product? A blueberry pie tasting cupcake! They were moist, the blueberries bursting in every bite. The vanilla cinnamon butter cream was the perfect finish! They were just plain good!

Vegan!

I had been trying to figure out a way to broaden my cupcake variety besides trying new flavors. It wasn't long until I found some vegan cupcake recipes. I noticed that the chocolate recipe I found was a lot like my regular chocolate cupcake. SO, I made the substitutions and voila! The vegan "butter cream" was pretty simple and as easy to make as regular butter cream. I was nervous once they were done. Would they measure up to a regular non-vegan cupcake? Yes! No one even new the difference! Everyone loved them, some even having seconds. I was so excited. Now I can't wait to try the next obvious vegan flavor. Vanilla! lol

Cream filled!


I have to admit at first I was a little intimidated by filling the cupcakes. Now that i feel like I've gotten the hang of it they are so much fun and taste so good. What I have here are the three that people have liked the most. The Banana Fluffernutter, which is a banana cupcake with marshmallow filling and peanut butter butter cream. Next is the Boston Cream (courtesy of my aunt Somari), which is a vanilla cupcake with vanilla cream and a chocolate glaze. Last but not least, is the Coconut Cream cupcake. This one has been my fave of the three. Its a coconut cupcake with coconut custard and a coconut butter cream! Hhhmmmmmmm! All three were moist and yummy.

I Love Pie




So why not make a pie cupcake? Lemon Meringue pie at that. I was sitting at my aunts house and she said she wanted lemon meringue pie, and I hadn't baked in a couple of days. I decided, what the heck, let's try it. Of course as a cupcake that is.  All the components were easy enough. Filling them was even kinda fun, but once they were done........OMG. They were these perfect little personal lemon meringue pie/cupcake goodies. You couldn't eat just one!

Millie's Birthday

I know Carrot cake is not original, but it was a request by my mother in law for her birthday. I did it with a cream cheese butter cream frosting. I really like how they turned out. There really isn't too much to say about them but don't they look pretty? Lol

Spice

A friend of mine had asked me if I had tried anything with tea then she came up with this brilliant little gem. a Chai spice cupcake with cinnamon butter cream! As soon as she said it I new I had to make it. But how would I get that flavor? Easy- real tea! I used a mortar and pestle to grind the tea into a fine powder before putting it into the batter. You could smell the chai throughout the house as it baked in the oven. I was so excited. I'm not sure what it was about the tea but these cupcakes and the combination of the cinnamon butter cream were so comforting. They would have gone perfect with coffee or I don't know, maybe a cup of tea? lol  They were also falling apart moist! So yummy!!! Once again, another hit.

Getting to my roots...

So I feel like my creative juices are really going now! This latest cupcake takes me back to my island roots. Its a sweet plantain and coconut cupcake with dulce de leche butter cream! Soooooo yummy!!!! When I bit into it I was reminded of times spent in Puerto Rico. At first you get the sweet plantain and then the coconut comes right out afterwards. The Dulce de leche butter cream reminds me of the candy I used to eat in Puerto Rico. I am going to be using this recipe again!

Trying something new

So I've been looking around for new ideas and I came up with a Gingerbread Latte cupcake. Unfortunately after making it and thinking it was original I came across the cupcake project blog and found out it was not (tear). I still think its pretty damn good and do give myself credit for being in the creative shadow of someone so original. I do have many more tricks up my sleeve and even though some of them may have been done before, will proudly display them here.
Back to the gingerbread latte!! they were so moist, with just the right amount of spice. The coffee butter cream came out perfect! It was my first time attempting that one and I truly surprised myself. So far these are a hit!!!

Nervous!


I love to bake cupcakes! I love coming up with new ideas, flavors, frosting's, and having others try them. I've seen so many blogs about cupcakes I figured, why not?
I've come up with a lot of recipes so far. Some adventurous and some that are just plain yummy. Besides my husband and two daughters, cooking is my life.

So, here goes! The first cupcake idea that started it all. My Pumpkin bacon cupcake with Maple buttercream frosting.
